Technical
Walk me through how you'd handle a room service ticket that comes in for a patient on a renal diet with a soft food restriction.
whether the candidate actually knows how to translate a medical diet order into a real plate, not just cook generically
How do you check and log food temperatures during production, and what do you do if something comes in out of range?
concrete familiarity with food safety and temperature logging procedures, not just saying 'I follow HACCP'
What's your process for scaling a recipe up or down when the census on the unit changes?
basic math and recipe-scaling competence that the job explicitly requires
How do you decide how much of an item to prep to avoid throwing food away at the end of shift?
